300g egg whites
600g caster sugar
1 tbs vanilla
- beat whites until soft peaks and then gradually add sugar
- beat on high for 5-10min then quickly add vanilla
- scoop, with 2 metal spoons 2 dollops per meringue onto lined and greased largest baking tray
- makes 11
Bake at 120 for 1 hour exactly, preferably leave to cool in oven with door ajar, if not just in a warm place.
