Meringues
Ingredients:

300g egg whites
600g caster sugar
1 tbs vanilla

Method:
  1. beat whites until soft peaks and then gradually add sugar
  2. beat on high for 5-10min then quickly add vanilla
  3. scoop, with 2 metal spoons 2 dollops per meringue onto lined and greased largest baking tray
  4. makes 11

Bake at 120 for 1 hour exactly, preferably leave to cool in oven with door ajar, if not just in a warm place.
