Carrot cake
Ingredients:

250ml veg oil
300g brown sugar
3 eggs
1kg carrot
350g SR flour
1 tsp bi carb
2 tsp mixed spice
handful of walnuts

 

Method:
  1. beat oil, sugar and eggs  for a long time (while you are peeling and grating carrots)
  2. fold carrots through oil mix then fold through sifted dry ingredients
  3. pour into a 25cm greased and lined cake tin and top with walnuts
  4. bake at 200 until just springing back to the touch
